Moved to its current location and expanded in the 1970s, the building now features a charming interior reminiscent of a rustic, cozy cabin, dominated by a 2,000-pound artisanal smoker made entirely in Quebec. It is within this setting that Chef Vincent Chatigny shares his world with you. A living metaphor that embodies perseverance, constant push, and the breaking down of psychological barriers. A true parallel between slow cooking in the smoker and success built solidly, one step at a time, over the course of time.
